ABOUT Menthi Aaku Pachadi | Andhra Style Methi Leaves Chutney RECIPE

Menthi Aaku Pachadi is a great favourite in my home and is chutney made with Methi Leaves in Andhra Pradesh. It is bitter-sweet and a great accompaniment with rice and ghee.

Ingredients Serving: 6

  1. 2 Cups Fresh Methi Leaves
  2. 1 tbsp Udad Dal
  3. 1/2 tbsp Chana Dal
  4. 1/2 tsp Rai
  5. 1/2 tsp Jeera
  6. 4-6 Akha Lal Mirch or Red Chillies
  7. 3 Flakes Imli or Tamarind OR 1/2 tsp Tamarind Paste
  8. 1/4 tsp Haldi or Turmeric
  9. 1 Pinch Hing or Asafoetida
  10. 1 tbsp Oil (I use Sesame Oil)
  11. Salt to Taste

Instructions

  1. Wash well with running water and leave in a colander to drain.
  2. In a kadhai, heat the oil.
  3. Add the mustard seeds and stir-fry till they start to pop.
  4. Add the dals and fry till light golden brown.
  5. Add the cumin seeds, red chillies, and tamarind flakes.
  6. Stir-fry for a few seconds.
  7. Add the turmeric and asafoetida. Mix well.
  8. Add the washed fenugreek leaves and stir-fry till they wilt.
  9. Turn off the heat and let the mix cool a bit.
  10. Using a little water, grind all the ingredients with salt to a coarse paste.
  11. Serve with hot rice topped with sesame oil, idlis, or dosas.
