Vanilla Ice Cream

Ingredients to make Vanilla Ice Cream

  • sugar 250 gms
  • Fresh cream 250 gms
  • Full fat milk 500 ml
  • G.M.S 2 tbsp
  • C.M.C 1/2 tsp
  • Vanilla essence 2 tsp
  • Custard Powder 2-3 tbsp
  • Liquid glucose 10 gms

How to make Vanilla Ice Cream

  1. Mix Vanilla Custard Powder, G.M.S and C.M.C in a little milk and keep aside.
  2. Boil the rest of the milk and liquid glucose in a heavy bottomed pan. After the first boil, keep on medium heat.
  3. Add sugar and the above made vanilla custard powder mixture, stirring continuously.
  4. Keep boiling for 4 to 5 minutes, stirring continuously, till it becomes a very thin custard and coats the spoon. Freeze the custard for 3 to 4 hours.
  5. Check after 3 to 4 hours if the custard is frozen and is ready to be beaten. If it becomes hard and frozen, proceed further.
  6. Cut the frozen custard into small cubes in a big pan and beat till fluffy and smooth along with fresh cream and vanilla essence.
  7. Freeze till firm for at least 5 hours or overnight.
