Ingredients Serving: 3

  1. For Pudding:Sweetened avocado juice 1/2 cup
  2. Heavy Whipping cream 1/4 cup
  3. Condensed milk 2 tbsp
  4. Agar agar 2 tbsp
  5. Water 2 tbsp
  6. For Cake:5 egg yolks
  7. sweetened avocado juices ½ cup
  8. cake flour. 1 cup
  9. baking powder. 2 tsp
  10. egg whites. 5
  11. cream of tartar. ½  tsp
  12. sugar. 6 tbsp


  1. For pudding: Mix agar agar with water ,set aside for 5 Minute After 5 minutes, mix whipping cream and agar with condensed milk stir it well .
  2. Heat the mixture on low flame until agar agar is thoroughly melted. Switch off
  3. Once mixture cools, add avocado juice. Mix well
  4. Pour into a mould and refrigerate for one hour .
  5. For avocado sponge cake : First separate the eggs, putting the whites into one bowl and the yolks into another bowl.  Add 5 egg yolks and 1/2 cup sweetened avocado juices. Stir until well combined. Sift in the 1 cup of cake flour and 2 tsp baking powder into the egg yolk mixture. Stir until smooth and Set aside.
  6. In a large clean bowl, add 5 egg whites, 1/2 tsp cream of tartar, Beat the egg whites with an electric mixer until creamy, Add 2 tbsp sugar thrice , beat them until stiff peaks form. Slowly fold the egg yolks batter to egg whites and mix thoroughly with spatula, until everything is well combined.
  7. Tap batter few times to expel any large air pockets. Gently pour the mixture into the greased 7 -inch mould then tap again.
  8. Preheat the oven to 150°c, Bake for 50 minutes or until done
  9. Allow cake to cool for at least 15 minutes. Using a sharp knife ,tap around the edges and the base, invert cake on wire rack and allow to cool completely
  10. For Serving: Take a piece of cake and pudding. Place avocado pudding on top of the cake and sprinkle with white chocolate
