Ingredients to make Nimona

  • 250 gms + 100 gms green peas
  • 2 pods garlic peeled
  • 4-5 green chilies
  • 1-1.5 inch ginger
  • 2 medium potatoes diced in 2 inch pieces
  • 1 medium onion chopped
  • 3 dry red chilies
  • 2 bay leaves
  • Pinch of hing
  • 3/4 tsp garam masala
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 cup coriander leaves
  • salt to taste
  • 6-7 tbsp oil

How to make Nimona

  1. Coarsely grind 250 gms green peas without adding water.
  2. Grind green chili, garlic and ginger without adding water
  3. Heat oil in a pan. Add hing, red chili and bay leaves. Saute for few seconds
  4. Add onion and saute until golden brown. Add green chili paste and cook for a minute an a low heat.
  5. Now add 100g green peas , potatoes. Cook until potatoes are tender
  6. Add the coarsely ground green peas and cook over low heat till the grains of the green peas separate stirring occasionally
  7. Add the dry spices and saute for around 30 secs. Grind coriander leaves to paste and add to pan. Mix well and cook for few seconds
  8. Add water as per desired consistency and mix
  9. Cover and cook over low heat till the the oil starts to float on the top.
  10. Add salt and mix well. Garnish with 1 tbsp ghee and serve hot
