Pasta Caponata

Ingredients to make Pasta Caponata

  • 200 gms, penne pasta, cooked as per instructions on pack
  • 2 white onions, cubed small
  • 2 tomatoes, cubed small
  • 3-4 cloves of garlic, minced
  • 1/2 cup aubergine, cubed small
  • 3-4 fresh basil leaves
  • 4 tbsp tomato puree
  • 1 tbsp ketchup
  • 1/2 tsp chilli flakes
  • 1 tsp mixed italian herbs
  • 1/2 tsp pepper
  • 2 tbsp olive oil
  • salt to taste
  • olives and grated parmesan for garnish

How to make Pasta Caponata

  1. Warm the cooked pasta and keep it portioned in 2 bowls. Heat the olive oil in a pan, saute the garlic till fragrant, add the onions and saute till transparent, this could take 2-3 minutes.
  2. Add the aubergine and let it cook for a few minutes.
  3. Next, add the tomatoes, ketchup and tomato puree and fold it all together, let it simmer for a few minutes.
  4. Season with chilli flakes, pepper, Italian seasoning and salt. Cook for 3-4 minutes till the aubergine is soft and cooked through.
  5. Serve over the pasta, with a garnish of grated cheese and olive.
