ABOUT Carrot Laddu RECIPE

They are very easy and simple to make and can be served as an after meal desserts or had any time if preferred. I added some brown sugar and dessicated coconut along with fresh coconut.

Ingredients Serving: 6

  1. 1 1/2 cups grated carrot
  2. 1/2 cup brown sugar
  3. 1/2 cup dessicated coconut
  4. 1/2 cup fresh grated coconut
  5. 1/4 tsp. cardamom powder
  6. pinch of saffron
  7. 2 tbsp. chopped mixed nuts
  8. 1 tsp. kewra water
  9. 1 tbsp. ghee

Instructions

  1. Heat ghee in a pan and saute the carrots for 2 minutes. Add the sugar, desiccated coconut, cardamom powder and fresh coconut.
  2. Stir fry on a low flame till combined well and starts to thicken. Add the chopped nuts (leaving some to garnish), saffron and rose water. Mix well and switch off the flame.
  3. Transfer to a plate and allow it to cool down a bit. Apply some ghee on your palm and form into small balls. Garnish with the remaining nuts and chill to serve.
