Sambar is perhaps the queen of Tamil Nadu cuisine it is actually inherited from the marathis.. Here is an authentic sambar

Ingredients Serving: 4

  1. 4-5 red chillies
  2. 2-3 spoons Channa dhal
  3. 2-3 spoons toor dhal
  4. 1 spoons fenugreek seeds
  5. 2 spoons turmeric
  6. 4-5 spoons coriander seeds
  7. 1 cup chopped carrots
  8. 1 cup finely chopped red onions
  9. 1 cup small onions
  10. 2 spoons tamarind paste
  11. salt to taste
  12. 2 cups toor Dhal
  13. 2 tomatoes finely chopped
  14. coriander leaves finely chopped
  15. 1 green chilly slit finely


  1. Pressure cook the toor dhal for 4 whistles till it’s soft
  2. Dry roast coriander seeds with red chillies , fenugreek seeds , Channa dal , turmeric and asoefatida
  3. Grind to a fine powder - this is the sambar powder that is also available in stores
  4. Take a pan and heat oil
  5. Add mustard seeds and add the onions, carrots and green chillies
  6. Fry for 5-10 minutes until the onions turn translucent
  7. Now add the sambar powder and add water
  8. Let this cook for 10 minutes when the vegetables are cooked add the mashed dal
  9. Now add salt and half of the coriander leaves and cook for 5 more minutes
  10. Add the tamarind paste and turn off the stove
  11. Garnish with coriander leaves
