ABOUT Hyderabadi Gil E Firdaus (Hyderabadi Wedding Special Kheer) RECIPE

This is synonymous with Hyderabad City. This dessert is the fondest memory that one can associate with this place. An extremely delectable, melt in mouth, lipsmacking dessert that will leave you licking your spoons literally. It is the most loved and sought-after one that is made on all important occasions and marriage ceremonies. It is a very rich dessert with Ghee, Dry fruits and nuts along with Khoya or Mawa and Condensed milk too. It does not call for the use of Bottle gourd in it at all. In this authentic recipe, only Basmati rice, Ghee and other ingredients as mentioned already are used. Gil E Firdaus is usually mistaken for the Kheer with grated Bottle gourd which is called as Kaddu Ki Kheer. Infact dry rose petals and Pineapple chunks are used in garnishing along with Silver leaf. So here's a toast to Hyderabad's awesome dessert. Enjoy!

Ingredients Serving: 7

  1. Basmati rice 1/2 cup (soaked for 2-3 hours and dried)
  2. Sugar 1/2 cup
  3. Condensed milk 1/2 cup
  4. Fresh cream 1 cup
  5. Dry fruits mixed (Almonds, Pistachios and Cashewnuts) slivered 1/2 cup
  6. ghee 1/2 cup
  7. Cardamoms 2-3
  8. Milk boiled and cooled 1 litre
  9. Khoya or Mawa 1/2 cup
  10. Pineapple thin slices 1/2 cup
  11. Silver leaf for garnishing

Instructions

  1. Heat ghee on a low and add Cardamoms into it. Now add soaked and dried rice into it. Fry it until golden brown and done. The aroma is so enticing.
  2. Now allow that to cool down before adding cold Milk and Sugar. Never add Milk when hot. It might curdle up. Mix well and allow the rice to cook on a low heat. It takes around 20-25 minutes.
  3. Let it cool down now. After it cools down, add Condensed milk to it along with Khoya. Add all that to a blender jar and blend until smooth. The Cardamoms added will give a nice aroma and flavour to the dessert.
  4. It is all done and needs to be chilled before serving. Garnish with loads of slivered dry fruits, Pineapple slices, dried Rose leaves and Silver leaf. Enjoy this heavenly dessert with your loved ones and friends alike. Happy Sweet Indulgence!
