ABOUT Masala White brinjals RECIPE

You must have seen purple brinjals. This is the first time I saw and cooked white brinjals. White brinjals are very delicious.

Ingredients Serving: 6

  1. White brinjals 1/2 kg
  2. Onions 4
  3. Tomatoes 3
  4. Green chillies 2
  5. Ginger 1 inch
  6. Garlic cloves 2
  7. Oil 4 tablespoon
  8. Asafoetida a pinch
  9. Cumin seeds 1/2 teaspoon
  10. Mustard seeds 1/2 teaspoon
  11. Turmeric powder 1/2 teaspoon
  12. Red pepper powder 1/2 teaspoon
  13. Coriander powder 2 teasppon
  14. Garam masala powder 1/2 teaspoon
  15. Coriander leaves for garnish

Instructions

  1. Wash the brinjals and cut them into quarters.
  2. Put half the oil in a wok on medium heat.
  3. Shallow fry the brinjals till soft. Keep aside.
  4. Now add remaining oil to the wok.
  5. Add asafoetida, cumin seeds and mustard seeds to the oil.
  6. Add finely chopped onions and stir fry them.
  7. Now add chopped tomatoes, green chillies and the dry spices. Cook well.
  8. Add shallow-fried brinjals to this masala. Cook for 2 minutes. Serve.
