White Fantasy

Ingredients to make White Fantasy

  • 1 egg white
  • 5.4 gms gelatin
  • Few drops of lemon
  • 800 gms of icing sugar
  • 10 gms of chocolates
  • 2 tablespoon unsalted butter
  • 2 tablespoon dessicated coconut
  • 1 cup cold heavy cream
  • 4 eggs
  • 1 tablespoon sugar

How to make White Fantasy

  1. Making the meringue: Blend 1 egg and 400 gms of icing sugar with a hand blender.
  2. Gum paste flowers: Make a dough of 400 gms icing sugar, 1 egg white and gelatin with few lemon drops. Yellow food colours are added to make the flower colourful.
  3. Mousse: Combine dessicated coconut with cream and separately melted white chocolate with cream. Whipped both separately to get soft peaks, then refrigerate them.
  4. Chocolate butter and coconut butter is put on a double boiler separately till it become foamy. Sugar is sprinkled and beaten nicely.
  5. Egg yolks are added and after stirring is completed remaining whipped cream is added.
  6. Mousse is piped out and meringue too and above that gum paste flowers are added.
  7. Refrigerate for 8 hours.

My Tip:

It is better to serve it in a white plate to make it look like snow white and has the appearance of white beauty.
