ABOUT Tricolour Idli Burgers.... RECIPE

This is just an idea to feed fussy kids and the same traditional Idlis are just arranged in this manner to please my kids. This is a yummy vegetarian version with no meat or chicken. Just plain idlis with some veggies and coconut chutney. Tomato onion chutney can also be used as a spread in this. Go for natural colours with boiled spinach puree for the green colour and turmeric and besan for the orange colour.

Ingredients Serving: 4

  1. Raw rice 2 cups
  2. Black gram or urad dal 3/4th cup
  3. Cooked rice 1 cup
  4. Salt 1 tsp
  5. Lettuce torn into big pieces 1 (bunch)
  6. Cucumbers sliced 3
  7. Tomatoes thinly sliced 2
  8. Coconut chutney 1/2 cup
  9. OR
  10. Tomato onion chutney 1/2 cup
  11. For green colour, Spinach puree 1/2 cup
  12. For orange colour turmeric 1/2 tsp + gram flour 2 tbsp

Instructions

  1. Soak both the rice and dal for 7 hours or so.
  2. Soak them separately.
  3. Grind them separately as well.
  4. Add cooked rice to the raw rice while grinding.
  5. Add salt and leave it to ferment overnight.
  6. Next morning, heat water in a big vessel or an idli cooker.
  7. Grease the idli plates as well.
  8. Divide the batter into 3 parts.
  9. Keep one part as it is.
  10. Make green batter by mixing spinach puree.
  11. Make orange colour by mixing turmeric and gram flour.
  12. Steam idlis as usual.
  13. Now align them as per our Indian Tricolour.
  14. Exactly in that order.
  15. Between each layer, apply some coconut chutney or tomato onion chutney and place the lettuce pieces and cucumbers.
  16. Add thinly sliced tomatoes too if desired.
  17. Finally secure it with a skewer or a toothpick.
  18. Serve them to your kids.
  19. They will love these tricolour burgers that are purely vegetarian.
