ABOUT Katori Chat RECIPE

With lots of aloo and chatpata ingredients, the katori chaat is lip-smackingly delicious.

Ingredients Serving: 2

  1. For the Katoris
  2. All purpose flour/ Maida – 1 and 1/2 cup
  3. Salt to taste
  4. Cold butter – 1 tbsp
  5. Ajwain – 1 tsp
  6. Oil for deep frying
  7. Small Katoris for the shape
  8. For the Stuffing
  9. Brown Chana – 1 cup
  10. Red Chili powder
  11. Roasted Cumin powder
  12. Turmeric powder
  13. Turmeric powder Oil
  14. For Green chutney
  15. Coriander leaves handful
  16. Mint leaves handful
  17. Green Chillies
  18. Lemon Juice
  19. Salt to taste

Instructions

  1. In a wide bowl, take the flour, salt, ajwain and cold butter. Crumble well. Add water slowly and knead to a stiff dough.
  2. Dust well and roll out thin. Using a katori, press out the rounds. Grease the katoris that you want shape on. 
  3. Press the cut circles on the katoris, Prick with fork all over the katoris, so that it doesn’t puff up.
  4. Heat a kadai with oil, gently drop the katoris into the hot oil
  5. Cook on low flame till the katoris turn crispy. 
  6. Remove on kitchen towels, Then again fry for a second time, so that the katoris become crispy.
  7. Heat a pan with oil, add the boiled chana and the spices. Cook till all the spices are incorporated into the channa.
  8. Grind all the ingredients together and add lemon juice.
  9. Assemble the fried katoris on a plate, add the spiced chana, onions and chutneys. Top with sev and boondi, serve right away.
