This one is close to my heart. I remember mom making these and packing it for me in lunch, when I was a kid. She always used to give them interesting shapes. I tried giving these cutlets shape too, but duck looked like mouse and stars took the shape of meteor. So, I took the safe path...Heart!

Colourful Vegetable Cutlets

Ingredients to make Colourful Vegetable Cutlets

  • Boiled potatoes - 2
  • Brown bread crumb- 1 slice
  • mustard sauce- 1/2 tsp
  • tomato sauce- 1 tsp
  • Chopped parsley or coriander
  • Seasoning- black pepper, salt, chilli flakes, dried herbs
  • Grated ginger - just for the flavour
  • Boiled peas - 1/4 cup
  • Grated carrot - 1/4 cup
  • Sweet corn - 1/4 cup
  • oil for cutlets

How to make Colourful Vegetable Cutlets

  1. Mix all the vegetables and mash well.
  2. Mix seasonings and sauces.
  3. Add crumbs and make a dough
  4. Make your favourite shapes.
  5. Heat a non-stick pan and roast these cutlets well, using minimum oil.
  6. Plate them and enjoy with a cup of hot chai!
