High Protein Black Bean and Corn Summer Salad. Simple recipe ready in just 10 minutes, bursting with summery flavours, protein, fiber and iron.

Ingredients Serving: 2

  1. Fresh :corn: corn 2 no
  2. Rajma 100gm
  3. Capsicum green, red, Yellow 50gm each
  4. Carrots 50gm
  5. Salt white papper powder to taste
  6. Mustard paste1/2 tbs
  7. Sugar 1/2tbs
  8. Lime 2no
  9. Salad/olive oil15ml


  1. Soak rajma for at least 5-6 hours. Change :droplet: water and cook till done.
  2. Roast fresh :corn: corn and remove the kernels.
  3. Cut all capsicim and carrots into losanges(diamonds).mix with rajma.
  4. Prepare :lemon: lemon dressing using lime juice, salt, pepper, mustard padte, sugar and salad/olive oil. Toss vegetables and rajma in the dressing.
  5. Serve chilled.
