ABOUT SAMBAR RECIPE

Sambar is a spicy lentil soup from the Southern Indian states. It is an important part of the meal and is cooked every day with a variation of some vegetable added to it. Sambar is served with breakfast items like dosas, idlis and wadas and also with plain rice for lunch along with other accompaniments.

Ingredients Serving: 4

  1. Toor dal ..... 1 cup
  2. tamarind juice .... 2-3 tbsps.
  3. jaggery ....... a small piece.
  4. tomato ................. 1
  5. Onion ................... 1 ( or small onions)
  6. Green chillies .... 1-2
  7. turmeric powder ... 1/4 tsp.
  8. Red chilli powder ... 1/2 tsp.
  9. Sambar powder ... 1 tbsp
  10. salt ................. to taste.
  11. coriander leaves ... handful.
  12. (For tempering :)
  13. Mustard seeds ..... 1 tsp.
  14. cumin seeds ........ 1 tsp.
  15. asafoetida ............ a pinch
  16. Dry red chillies .... 2-3
  17. garlic ............. 2-3 cloves (crushed)
  18. Curry leaves ......... a sprig
  19. oil ... 3 tbsps

Instructions

  1. Soak the toor dal for 2-3 hours. Cook it in the pressure cooker( 2-3 whistles)
  2. In a pan heat a little oil. Add the tempering ingredients.
  3. When the seeds crackle, add the onions and stir fry for 1 minute.Now add the crushed garlic, tomato and the dry spice powders and mix well.
  4. Add the salt, jaggery, tamarind juice and dal. Bring to boil adding sufficient water. Simmer until you get the desired consistency.

I like to have it with plain rice.
