Reshmi/Silky Kabaabs (With chicken mince)

Ingredients to make Reshmi/Silky Kabaabs (With chicken mince)

  • chicken mince 700 gm
  • FRESH cream 2 TBSP
  • green chillies crushed 5
  • onion chopped very finely 1 (medium sized)
  • salt 1 tbsp
  • ginger garlic paste 1 tbsp
  • red chilli powder 1 tsp (optional)
  • cumin powder roasted 1 tbsp
  • coriander powder roasted 1 tbsp
  • coriander leaves chopped 1/2 cup
  • mint leaves 1/2 cup
  • Garam masala 1 tsp
  • coconut powder dry 3 tbsp
  • gram flour roasted 2 tbsp
  • lemon juice 2 tbsp
  • Pure desi ghee 2 tbsp
  • Pure ghee 1 tbsp (extra for basting while baking)

How to make Reshmi/Silky Kabaabs (With chicken mince)

  1. Coarsely chop the onion, green chillies a little.
  2. Add all the ingredients to a big mixing bowl along with 2 tablespoons of ghee.
  3. Mix well and cover.
  4. Let this sit in the refrigerator overnight for best results.
  5. Next day, either make kabaabs on skewers or mould them with hands.
  6. Grill them on stovetop or bake them on 200° for 25-30 minutes.
  7. Before grilling or baking, baste them with extra amount of pure ghee generously.
  8. Alternatively these can be deep fried too.
  9. Serve them with salad and mint yogurt chutney.
