ABOUT Reshmi/Silky Kabaabs (With chicken mince) RECIPE

These melt in mouth kebabs or kababs from the Mughlai Cuisine are the juiciest and the most succulent mainly due to it's long marination. They literally become as soft as silk. These are therefore often referred to as silky kebabs. These can be made with chicken or mutton mince both. Happy Grilling !!!!!!!!!

Ingredients Serving: 6

  1. Chicken mince 700 gm
  2. FRESH CREAM 2 TBSP
  3. Green chillies crushed 5
  4. Onion chopped very finely 1 (medium sized)
  5. Salt 1 tbsp
  6. Ginger garlic paste 1 tbsp
  7. Red chilli powder 1 tsp (optional)
  8. Cumin powder roasted 1 tbsp
  9. Coriander powder roasted 1 tbsp
  10. Coriander leaves chopped 1/2 cup
  11. Mint leaves 1/2 cup
  12. Garam masala 1 tsp
  13. Coconut powder dry 3 tbsp
  14. Gram flour roasted 2 tbsp
  15. Lemon juice 2 tbsp
  16. Pure desi ghee 2 tbsp
  17. Pure ghee 1 tbsp (extra for basting while baking)

Instructions

  1. Coarsely chop the onion, green chillies a little.
  2. Add all the ingredients to a big mixing bowl along with 2 tablespoons of ghee.
  3. Mix well and cover.
  4. Let this sit in the refrigerator overnight for best results.
  5. Next day, either make kabaabs on skewers or mould them with hands.
  6. Grill them on stovetop or bake them on 200° for 25-30 minutes.
  7. Before grilling or baking, baste them with extra amount of pure ghee generously.
  8. Alternatively these can be deep fried too.
  9. Serve them with salad and mint yogurt chutney.
