    Ingredients to make Tortellini

    • 2/3 cup Ricotta Cheese (any of your choice of cheese)
    • 1/4 cup Parmesan Cheese (grated)
    • 1 1/2 cups flour
    • 2 egg
    • 3 tbsp spinach chopped
    • 1/2 tbsp water
    • 1 Egg mixed with 1/2 tsp water (egg wash)
    • 1/2 tsp olive Oil
    • 1/4 tsp Ground pepper
    • 1/4 tsp salt

    How to make Tortellini

    1. Add flour, 1 egg, olive oil, water and salt in a bowl to make dough. Knead well until smooth
    2. Combine ricotta cheese, parmesan cheese, spinach, egg , and pepper into a mixture in a bowl
    3. Roll out the dough and cut into 3 -4 inch rounds with a round cookie cutter,if you have any. Place 1/4 tsp of the spinach mixture into the center of each round.
    4. Fold around your finger and turn the edge around to form a tortellini. Brush with egg wash.
    5. In a half -filled pot of boiling salted water add the tortellini in batches.
    6. Cook for 3 to 5 minutes, until they float to the surface. Drain and let it cool.
    7. Serve with pasta sauce or in a broth as a soup.
