Khichdi is a staple food in India. In every household once in a week Khichdi is prepared. So, let’s  make the Khichdi more tastier by adding (Pumpkin) to it, Khichdi specially perpare during summer season because it is a very comforting lunch in hot summer days as it keeps stomach cool and when accompanied with raita , it becomes more soothing for stomach pumpkin makes Khichdi a lot more tastier.

Ingredients Serving: 2

  1. 1 cup rice
  2. 1 Cup Moong Dal
  3. 200 grams Pumpkin cut small cube
  4. 2 medium sized onion fine chopped
  5. 1 fine chopped tomatoes
  6. 1/4 Black mustard seeds
  7. 1/4 cumin seeds
  8. 5 Chopped green chili
  9. 1/4 turmeric powder
  10. 2 red chili
  11. 1 coriander powder
  12. 1tbs garam masala
  13. Salt for taste
  14. 1 sugar
  15. ghee
  16. Coriander leaves

Instructions

  1. Chop pumpkin in small size.
  2. Take a cooker, add ghee and add black mustard seeds, Cumin seeds, and green chili.
  3. Add chopped onion, tomatoes and pumpkin to it.
  4. Add Turmeric powder, dry chill ,garam masala, salt for taste, Sugar, dry coriander powder.
  5. Add washed rice and moong dal to it. Mix properly and on a low flame cook for two minutes.
  6. Add water and cook on a medium flame in the pressure cooker like usual khichdi.
  7. After 5-6 whistle turn off the stove.
  8. Garnish with coriander leaves
  9. Pumpkin Khichdi is ready
  10. Serve with raita. Potato fry , Pickle, Papad . Ghee and green chutney.
