Ingredients to make Pasta tomatina

  • Pasta 1 cup
  • Mix vegetables(mushrooms capsicum spring onions) 1 cup
  • One onion chopped
  • 3 tomatoes
  • 2 green chili adjust according to your taste
  • 5 garlic cloves
  • Soy sauce 1 tbsp
  • tomato ketchup 1 tbsp
  • salt
  • vinegar 1 tbsp
  • jeera powder 1/2 tsp
  • Green coriander leaves

How to make Pasta tomatina

  1. Boil pasta with little salt and oil. Stain and keep aside. Reserve some pasta stock. Add a tsp of soy sauce to boiled pasta and mix well.
  2. Heat water to a roaring boil .add tomato and take off from heat. Keep covered for 10 minutes. Peel the skin. Add to a mixer jar along with 2 garlic clove and green chili. Adjust no of chili's as per your liking for hotness. Make a paste.
  3. Heat oil in a kadhai. Fry chopped garlic and onion till translucent.
  4. Add sliced veggies. Fry on high flame for two minutes.
  5. Add tomato paste. Mix and add salt and jeera powder. Reduce the flame and cook the sauce. Add vinegar soy sauce. Stir until the tomatoes reduce to half. Add pasta and mix well. If it becomes too dry add little pasta stock as required.
  6. Switch off the flame. Add tomato ketchup mix well and garnish with green coriander leaves.
