ABOUT Chicken dum biryani RECIPE

This traditional Kolkata Biryani - beautifully cooked saffron basmati rice with the signature boiled potato . The ultimate Biryani is loved by all . It's mouthwatering good .

Ingredients Serving: 10

  1. Chicken - 500 gms
  2. Oil - 2 tbsp
  3. Dry chilli - 3 pieces
  4. Salt to taste
  5. Suger - 1 tsp
  6. Turmeric - 1 tsp
  7. Cumin seed powder - 1 tbsp
  8. Red chilli powder - 1 tbsp
  9. Kashmiri Chilli Powder - 2 tsp
  10. Yoghurt - 50 gms
  11. Onion - 2 large
  12. Garlic - 2 tbsp
  13. Tomato - 1 piece (big size)
  14. Potato - 3 small pieces (cut in half)
  15. Garam masala - 1 tbsp
  16. Egg - 2 (boiled)
  17. Ingredients :- (for the rice)
  18. Basmati rice - 250 gm (soaked in water for at least 1 hour)
  19. Salt to taste
  20. Oil - 1 tbsp
  21. Ghee - 2 tbsp
  22. Bay leaf - 3 pic
  23. Cloves - 4 pie
  24. Green cardamom - 4 pie
  25. Cinnamon stick - 5 pie (small pieces)
  26. Saffron strands - 1 pinch (soaked in milk)
  27. Black pepper - 1 tbsp
  28. Biryani garam masala - 1 tbsp
  29. Kerwa water - 1 tbsp
  30. Metha attr - 1 drop
  31. Ingredients :- (for the biryani garam masala)
  32. Green cardamom - 1 tbsp
  33. Cinnamon stick - 1 tbsp (small pie)
  34. Cloves - 1 tsp
  35. Black cardamom - 1 pie
  36. black pepper - 1 tsp
  37. Jawti - half flower
  38. Nutmeg powder - 1/2 tsp
  39. Kabab Chini - 1 tsp
  40. Shahi jeera - 1/2 tsp
  41. Shahi morij - 1 tsp

Instructions

  1. Methods :-
  2. Step - 1
  3. If you making the Biryabi garam masala from scratch , make it first .
  4. First heat the pan and dry fry the whole ingredients . Now grid thr Garam masala in a blender and its ready for use making any type biryani
  5. Step - 2
  6. Marinate the chicken with the mentioned ingredients with 1 tbsp oil along for 2-3 hours in refrigerator .
  7. Step - 3
  8. Heat the pan for a few minutes and pour oil in it . Put the potato pieces in the pan and shallow fry high flame for 2 minutes . Keep aside .
  9. Step - 4
  10. When done , put the marinated chicken in the pan add the fried potatoes and add 1 cup of water mix well for 15 minutes and put of the flame . See that the chicken is cooked through . Let it rest .
  11. Step - 5
  12. Now take 2 liter of water in a bowl and boil . Then add salt and bay leaf . Few minutes later add the water soaked rice . When half cooked , strain out the rice .

  14. The a big container and pour white oil add green cardamon , cloves , cinnamon sticks . Now it's time to make some layers . In a first layer add cooked chicken , in the next layer add some quantity of strained rice , then add garam masala , black pepper and salt . Add the remaining rice and add ghee , Saffron milk and seal the container from above .

  16. Now take a layer container with half liter water , and put it on the stove . Next put the previously sealed container above the large one .
  17. Step - 8
  18. Cook in high flame for 5 minutes and 15 minutes in low flame . When done, turn off the gas and let it rest for 15-20 minutes .
  19. Step - 9
  20. Serve with your favorite side dish - chicken chaap or mutton razzela
