ABOUT Chicken Malvani RECIPE

Malvani cuisine is the cuisine of coastal region (which is known as Konkan) of Maharashtra, Goa and some northern parts of West Karnataka.

Ingredients Serving: 2

  1. Chicken (cut into medium pieces)-500 grams
  2. Salt to taste
  3. Ginger Paste - 2 tablespoons
  4. Garlic Paste-3 tablespoons
  5. Cumin seeds-1 teaspoon
  6. Cloves-5
  7. Green Cardamom -4
  8. Black Cardamom -2
  9. Black pepper corn -5
  10. Poppy seeds -1 teaspoon
  11. Dried coconut-1/4 cup(if you do not have dried coconut,then can use fresh coconut also)
  12. Dried red chillies -5 broken
  13. Coriander seeds-2 teaspoons
  14. Oil-1/4 cup
  15. Onions sliced -2
  16. Turmeric powder-1/2teaspoon

Instructions

  1. Mix chicken with salt, ginger, garlic paste, 2 teaspoon oil and keep in refrigerator for 1/2 hour.
  2. Dry roast cumin seeds, cloves,green cardamom, black cardamom, black peppercorns, poppy seeds,dried coconut,red chillies and coriander seeds till fragrant. Cool and grind to make a fine powder.
  3. Heat remaining oil in a deep non -stick pan.Add onions and sauté until golden brown.
  4. Add turmeric powder and salt and mix.
  5. Add marinated chicken and remaining marination masala. Cook until oil gets separated.
  6. Add 2 cups of water, bring it to boil, when the water will start boiling, simmer the gas and cook. till the chicken is done.
  7. Serve hot with steamed rice.
