South Indian Vegetable Korma is a creamy coconut curry that is light on spice but high on flavor.

Ingredients to make Vegetable korma

  • Ingredients for Spice paste:-
  • Chopped onion 1Medium size
  • ginger sliced 1Tsp
  • cashew 1/4 Cup
  • coriander Powder 1Tsp
  • cumin powder 1/2 Tsp
  • Red chili powder 1/2 Tsp
  • cinnamon powder 1/2 Tsp
  • turmeric powder 1/4 Tsp
  • Ingredients for the curry:-
  • oil 1Tbsp
  • tomato finely chopped 1Big size
  • coconut milk 1/2 Cup
  • salt As per taste
  • potato diced 2Medium size
  • carrots diced 2Medium size
  • Green Bell pepper 1Medium size
  • peas 1Cup
  • Green beans chopped 1/2 Cup

How to make Vegetable korma

  1. Add all the ingredients mention under "INGREDIENTS FOR SPICE PASTE" to mixer grinder.
  2. Make a smooth paste by adding little water if required .
  3. Transfer the paste to bowl and keep aside.
  4. Add potatoes, carrots and beans to the microwave safe bowl and cook on high power for 5 minutes.
  5. Take a Kadai and heat oil.
  6. Add spice paste to the hot oil .
  7. Saute on medium flame for 2-3 minutes.
  8. Add coconut milk, tomatoes and salt.
  9. Mix everything well and cook for 2-3 minutes.
  10. Add bell pepper , peas mix well and Saute for 2-3 minutes.
  11. Now add other vegetables to the mixture and add salt as per taste .
  12. Mix everything well cover and cook the curry for 10 minutes on medium low heat.
  13. Uncover the curry and simmer for 5 more minutes.
  14. If you need curry to be thin add Little water and cook for few more minutes.
  15. Serve hot with rice or roti.

My Tip:

Any vegetable of your choice can be used. Coconut milk cab be substituted with yougurt or milk.
