Ingredients Serving: 3

  1. Drumsticks 5
  2. Vegetable oil 2 tablespoons
  3. Onion 1 sliced
  4. Tomato 1 chopped
  5. Tomato paste 1 tablespoon
  6. Green chilli slit lengthwise 1
  7. Goan red curry paste 250 grams
  8. Salt 2 teaspoons
  9. For Goan Red curry paste :
  10. Dried Kashmiri chillies 5
  11. Freshly grated coconut 3 tablespoons
  12. Garlic pods 5
  13. Ginger garlic paste 1 teaspoon
  14. 1/2 onion chopped
  15. Tamarind paste 1 tablespoon
  16. Turmeric powder 1/4 teaspoon
  17. Cumin seeds 1/2 teaspoon
  18. Coriander powder 1 teaspoon
  19. Water for grinding
  20. Cilantros for garnishing

Instructions

  1. Firstly , prepare Goan red curry paste using the ingredients listed under Goan red curry paste .
  2. In a wok , heat oil , sauté onions , tomatoes . Add curry leaves . Once the tomatoes turns soft and mushy , then add the drumsticks , sprinkle little water and close the lid . Let the drumsticks cook and raw smell leaves.
  3. . In this stage , add the ground Goan red paste , add little water , salt and close the lid . Let the masala get coated well , curry turn flavourful . Switch off the stove once you get the desired consistency . Finally garnish with coriander leaves . Serve hot .
  4. Goan Drumstick curry goes well with rice / rotis / dosas.
