Authentic Alugadde Palya

Ingredients to make Authentic Alugadde Palya

  • 2 large potatoes
  • Bengal gram/chana daal 1 tablespoon
  • Black mustard seeds 1 tablespoon
  • 3 green chillies slit
  • 2 broken dry red chillies
  • 8-10 curry leaves
  • handful of finely chopped coriander leaves
  • a generous pinch of asafoetida
  • salt to taste
  • grated and deskined ginger 1/2 inch
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • oil 4 tablespoon
  • 1 large onion roughly chopped

How to make Authentic Alugadde Palya

  1. Boil the potatoes. let cool. deskin and roughly mash
  2. In a wok, add oil, temper with dry red chillies,curry leaves, mustard seeds, chana daal and wait till the seeds splutter
  3. add the green chillies, ginger and onions. sauté till onions turn translucent
  4. add the dry spices and sprinkle some water
  5. sauté on Low-medium heat till spices blend well
  6. add the mashed potatoes and salt
  7. mix well and cook on Low heat for 3-4 minutes
  8. add chopped coriander leaves. mix and take off heat
  9. serve hot with pooris,Indian flat breads or daal-rice combination
