About Nargis kofta Recipe

Nargis kofta is a very famous snack of jodhpur , rajasthan .it is a snack with three layers or colours with dry fruits stuffing ,and very crunchy ftom outside

Nargis kofta

Ingredients to make Nargis kofta

  • For batter
  • 1 cup all purpose flour
  • 1 tsp salt
  • water to a thick batter
  • For Outer Layer
  • 4 boiled and mashed potaoes
  • 1 tbsp oil
  • 1/2 tsp mustard seeds
  • Pinch of hing
  • Pinch of haldi
  • 4-5 green chiilies crushed
  • handful corriender leaves
  • For middle layer
  • 2 grated beetroot
  • 1/4 tsp salt
  • 1/4 tsp pepper powder
  • 1/4 tsp chaat masala
  • For inner white layer
  • 100,gram paneer
  • 2 green chillies finely chopped
  • salt to taste
  • 1/2 tsp pepoer powder
  • 1/4 tsp chaat masala
  • 1/4 cup dry fruits
  • Rusk crumbs for coating
  • oil for frying

How to make Nargis kofta

  1. First we have to make a thick lump free batter by adding water and salt in maida and keep aside
  2. Now in a pan heat oil and add mustard seeds to splutter ,add mashed potatoes , hing , green chillies , salt and cortiender leaves and keep aside to cool
  3. For second middle layer mix salt , pepper powder and chaat masala in grated beetroot
  4. Add salt , pepper green chillies and chaat masala in grated paneer , and inner layer is ready
  5. Now take a small portion of potato mixture and flatten with hands, then put some grated beetroot mixture
  6. After that spread paneer mixture and finely stuffed with dry fruits
  7. Cover properly and make balls , dip in the batter
  8. Coat with rusk crumbs
  9. Then again dip in batter ,.and coat with crumbs ,.and put in refrigerator for 15 minutes
  10. Finely Fry in hot oil , on medium to low heat till golden or crisp
  11. Serve hot

My Tip:

Double coating is maje it more crispier
