ABOUT Peanut Dumplings with Ginger Syrup RECIPE

This is eaten on the 15th day of the Chinese New Year or the Lantern festival. These peanut dumplings are a popular recipe served with ginger syrup.

Ingredients Serving: 6

  1. Rice flour – 2 cups
  2. Water –  - 1 cup
  3. Filling : Roasted groundnut – 1 cup
  4. Sugar/Brown sugar – ĵ cup
  5. Peanut butter – 1 tbsp (optional)
  6. Ginger Syrup : Water – 4 cups
  7. Sugar – 1 cup
  8. Pandan Leaf (optional)
  9. Chopped Ginger – 1 tbsp

Instructions

  1. Make smooth and soft dough by combining warm water with rice flour. {If you are using glutinous rice, then no need to heat water}.
  2. To avoid drying, cover the dough. Make filling by grinding peanut, brown sugar together and mixing in peanut butter.
  3. Divide the dough into small marble sized balls.
  4. Make ginger syrup by boiling 4 cups of water by adding chopped ginger. Leave it to come down to 3 cups. Stir in sugar and let it boil for 10 minutes.
  5. To shape dumplings, first make small balls of rice mixture in ‘step 1’. Take one ball in your hand and gently flatten it using fingers and place the filling in the center.
  6. Bring the edges to seal the dumpling. Now gently roll into a sphere shape using both the palms.
  7. Take 4 cups of water in a pan and bring it to boil.
  8. Carefully drop prepared dumplings into boiling water.
  9. When the dumplings are cooked, they will start to float on top. Drain and transfer them to boiling ginger syrup.
  10. Remove in a serving bowl along with syrup and serve hot.
