Ingredients to make Spinach Corn Paneer Bites

  • spinach 2 bunches washed and chopped finely
  • corn kernels blanched 1/2 cup
  • paneer 100 grams shredded
  • garlic 2 cloves chopped.finely
  • Green chilli 1 small finely chopped
  • oil 1 tablespoon
  • salt to taste
  • lemon juice 1 to 2 teaspoon
  • carrot 1/4 cup finely chopped
  • 8 wholewheat or multigrain bread slices
  • butter as needed to spread on the bread slices

How to make Spinach Corn Paneer Bites

  1. Heat oil in a pan and saute garlic.
  2. To the sauted garlic add spinach and saute for a minute.
  3. Then add the.chopped.carrots, shredded paneer, corn.kernels, chilli and salt. Saute nicely till water evaporates.
  4. Once water has dried, add the lime juice. Put off flame.
  5. Spread butter on one side of each slice.
  6. Place the buttered side of the other slices on the stuffing. Thus there will be four sandwiches now.
  7. Lightly grill or toast the sandwiches. This is an optional step.
  8. Cut each sandwich into 4 triangles.
  9. Serve with chutney or ketchup.

My Tip:

You may use any kind of bread.
