ABOUT Lapsi RECIPE

Lapsi is one of the most humble of sweet dishes, very earthy with no fancy frills.it is part of both Rajasthani and Gujrati cuisine.

Ingredients Serving: 6

  1. 1. 1 cup broken wheat (daliya )
  2. 2. 1 cup jaggery grated
  3. 3. 4 cup water
  4. 4. 1 / 4 cup grated coconut
  5. 5. 2 tsp green cardamoms powder
  6. 6. 2 tsp ghee
  7. 7. 7 to 8 almonds slivered

Instructions

  1. 1. Heat ghee in kadai and add broken wheat. Fry on medium heat, with regular stirring, till the wheat turns golden brown.
  2. 2. In a separate pan, boil water with jaggery till the jaggery melts.
  3. 3. Slowly, add the jaggery water to the roasted broken wheat. Add it from a side as there would be a lot of sputtering.
  4. 4. Add half the cardamom powder and grated coconut. Mix well. Reduce the heat to low and cook covered till the water is all soaked up and the daliya is well cooked. Take about 20 - 25 minutes.
  5. 5. Remove in a serving dish and garnish with remaining grated coconut, cardamom powder and almonds.
