A delicacy mostly found in udupi managlore belt, made with banana served as breakfast or evening snack

Mangalore buns

Ingredients to make Mangalore buns

  • 2 over ripe bananas
  • 3 tbsp sugar
  • 1 tsp salt
  • 1/4 cup curd
  • 2cups maida
  • 1tbsp jeera
  • oil for frying
  • 2Pinch baking soda

How to make Mangalore buns

  1. Mash the banana with the help of fork add sugar while mashing. Please don't grind the bananas. Mash well till no lumps
  2. Sugar can be adjusted accordingly as per banana sweetness
  3. Add salt jeera and soda and mix well
  4. Add curd and mix it to blend with bananas
  5. Add the maida and knead to a soft dough.dont add any water
  6. Drissle some oil and knead again for 1 min
  7. Cover the dough and keep it in a warm place for around 8 hours or overnight
  8. Don't skip the above step otherwise the buns won't be soft n fluffy
  9. Next day take the dough and knead again for 1 min
  10. Roll into thick Puris and deep fry on medium flame
  11. Should be brown like this
  12. Serve with tea, filter coffee, potato patal bhaji or coconut chutney

My Tip:

Black overriped bananas works well. diping in tea like biscuits feels heavenly
