About Hyderabadi Chicken Dum Biryani Recipe

This Hyderabadi Chicken Biryani is cooked in Dum style with aromatic spices using basmati rice.

Hyderabadi Chicken Dum Biryani

Ingredients to make Hyderabadi Chicken Dum Biryani

  • To Marinade chicken
  • chicken-3/4 Kg
  • yogurt - 2 tbsp
  • turmeric Powder- 1 tsp
  • coriander powder- 1 tbsp
  • Biryani masala- 2 Tbsp
  • Red Chili powder - 1 tsp
  • mint - Half bunch
  • Green Chili- 4
  • oil - 4 tbsp
  • ginger & Garlic Paste- 1 Tbsp
  • salt - 3 tsp
  • TO COOK rice :
  • Basmati rice - 3 cups
  • jeera - 1 tbsp
  • Bayleaf-3
  • cloves-3 no’s
  • cardamom-2
  • cinnamon Stick- 2”
  • salt - 1 tsp
  • To Garnish :
  • mint Leaves-Fist Full
  • Fried onions- HandFull
  • saffron- few strands

How to make Hyderabadi Chicken Dum Biryani

  1. Wash the chicken well and pat it using a paper towel to absorb excess water.
  2. Grind mint leaves and green chili paste.
  3. Mix all the ingredients in ‘to marinate ‘ column , add grinded mint & green chili paste mix throughly. Let it marinade for atleast 2 hrs in refrigerator.
  4. Meanwhile fry the onions for Biryani. Slice the onion in thin slices sprinkle some rice flour and then deep fry. Fried onions ready.
  5. Wash and soak the basmati rice for 45 minutes.
  6. In vessel boil water and add all the spices mentioned in top cook with rice let water started to rolling boil.
  7. Add soaked basmati rice let it cook for 60% . Then strain the water using strainer completely.
  8. In a bottom thickened Biryani handi spread all the marinated chicken evenly, add fried onions & mint leaves too.
  9. Then add 60% cooked rice and spread evenly.
  10. Spread well add fried onions, chopped mint leaves and close the lid.
  11. In a high flame cook for 5 minutes.
  12. Keep a dosa tawa under the Biryani handi and keep the flame medium cook for 15 minutes.
  13. Meanwhile soak the Saffron in warm milk and mix well, open the lid add saffron milk.
  14. Keep the flame low and cook for 15 minutes and switch off the flame.
  15. After 10 minutes open the Biryani and mix using a small stick or skewers to separate grains.
  16. Hyderabadi Chicken Dum Biryani Ready.

My Tip:

Tip I have used Shan brand Biryani masala.It’s good for all Dum Biryani. Timings &Tips: 1. Marinate chicken for atleast 2 hour 2. Using heavy bottom vessel with lid 3. Spread the chicken as layer at the bottom of vessel .Then add 4 Green chili (don’t slit) & fried onions 4. Cook the rice for 60% done add it to chicken using strainer. Timings important; 1.Cook for 5 minutes HIGH 2.Then keep Dosa pan under the vessel then Keep the flame at MEDIUM cook for 15 minutes. 3.Then open the lid add the saffron soaked milk , close the lid again.keep the flame LOW & cook for seasoning 10 minutes 4.After that Switch off the flame . 5.Open the lid after 10-15 minutes.Biryani will be ready Video Recipe :point_right: https://youtu.be/IldrKZhJlGQ
