About Watermelon pancake Recipe

This is a very easy and simple recipe. You only need few basic ingredients to make these pancakes. For summer it is the best breakfast option as you get a filling meal first thing in the morning, that's also cool and refreshing enough to beat the heat.

Ingredients to make Watermelon pancake

  • Rice flour 1cup
  • Wheatflour 1/3cup
  • Watermelon juice 1cup
  • red chilli powder 1tsp
  • sugar 1/2tsp
  • salt as per taste
  • oil for making pancakes

How to make Watermelon pancake

  1. Mix all the ingredients to make batter.
  2. If required add little water.
  3. Let it rest covered for 15-20mins.
  4. Grease oil in a hot tawa.
  5. Drop a ladleful of batter in the centre and spread into a circle with the back of your spoon.
  6. Fry till the pancake turns reddish brown, then flip and fry on the other side. 
  7. Serve hot with any spicy chutney or with maple syrup.

My Tip:

You can add chopped coriander leaves, green chilli and spices of your choice.
