ABOUT Coconut stuffed sweet potato pithe RECIPE

This is my mothher recipe. She was an excellent cook and my basic training of cooking was from her. It is a sweet dish , coconut stuffed soaked in sugar syrup. It was so delicious that nobody can not identify , made out of sweet potato.

Ingredients Serving: 10

  1. Boiled mashed sweet potato - 2 1/2 cups
  2. Flour - 1/2 cup
  3. Milk powder - 1 cup
  4. Ghee.- 2 tbsp
  5. Cardamom powder - 1 tsp
  6. Pinch of salt
  7. Sugar syrup - 3-4 cups ( one string)
  8. Grated coconut - 2 cups
  9. Jaggery- 1/2 cup

Instructions

  1. Boiled the sweet potato and mashed well.
  2. Add flour, milk powder and ghee with mashed potato, mix properly to make soft dough.
  3. Mix grated jaggery with grated coconut and cook it . Keep aside for cool.
  4. Make small balls from the dough. Take one ball at a time and shape it like a puree, put little coconut stuffing in the center.
  5. Close it and shape it like flower.
  6. Deep fry them in hot oil on low heat, till light brown colour.
  7. Dip into sugar syrup for 20 - 30 minutes.
  8. Mix 1 tsp ghee with 1 tbsp powder milk and heat it for few seconds. Scramble it and sprinkle on the top of the pithe. Ready for serve.
