ABOUT Chicken Chettinad RECIPE

Chicken Chettinad is an authentic Tamalian dish, a spicy chicken curry made to be served with some hot steamed rice.

Ingredients Serving: 4

  1. Thigh and leg pieces around 1 kg
  2. Dry roasted corriander - 1 tsp
  3. fennel seeds - 1 tsp
  4. cumin seeds - 1/2 tsp
  5. black pepper corns - 1 tsp
  6. Ginger, garlic paste - 2 tsp
  7. garam masala powder - 1/2 tsp
  8. Green chilli - 2
  9. tomato 1
  10. Chopped onion around 4 nos.
  11. Red chilli powder preferably Kashmiri red chilli powder - 2 tsp
  12. Curry leaves - 10
  13. Coriander leaves [handful]

Instructions

  1. First take white oil in a wok and put some curry leaves and whole garam Masala.
  2. Then add in the chopped onions and fry until brown.
  3. Put the chicken pieces to it and fry in high flame along with the onions.
  4. Then add the ginger garlic paste and saute until oil separates from the Masala.
  5. Take the dry roasted Masala and saute for 2 mins. Then to it add the tomatoes.
  6. Add lil water and saute for some more time. Put salt,haldi and toss it for some more time.
  7. Pour water to it and cook in a low flame.
  8. When the oil comes on top of the gravy add curry leaves to it and dish out.
