Ingredients Serving: 4

  1. For the dhokla :
  2. Besan (gram flour) - 1.5 cups
  3. Salt - 1 tsp
  4. Baking powder - 1 tsp
  5. Baking soda - 1/2 tsp
  6. Refined oil - 1 tbsp
  7. Lemon juice - 1 tbsp
  8. Water
  9. For the tempering :
  10. Mustard seeds - 1 tsp
  11. Curry leaves - 10
  12. Coriander leaves (chopped) - handful
  13. Water - 1/4 th cup
  14. Sugar - 1 tbsp
  15. Salt - 1/2 tsp
  16. Refìned oil - 1 tbsp
  17. Green chillies (slit) - 2

Instructions

  1. For the batter, mix the Besan, Salt, oil, lemon juice in a mixing bowl. Add water and whisk to form a smooth batter without any lumps.
  2. Now let this batter rest and keep it covered for 30 minutes.
  3. Now add baking and baking soda into the batter and whisk for couple of minutes until little fluffy.
  4. Pour this batter into a greased cake tin or dhokla mould. Place this in a steamer, close the lid and steam for 25-30 minutes.
  5. Once cooked, a toothpick inserted will come out clean. Rest it for 10 minutes.
  6. Now to make the tempering, heat a pan with oil. Add mustard seeds, curry leaves, followed by the green chillies.
  7. Then add the Sugar, salt and water. Let this boil for few seconds and then add the coriander leaves. Pour this over the cooked dhokla.
  8. Now cut this into pieces and serve.
