Wadi aalu drumstick curry

Ingredients to make Wadi aalu drumstick curry

  • 6 small size urad dal wadi(i have used store bought)
  • 3 medium potatoes, preferably new potatoes
  • 4 drumsticks
  • 1 tbsp ginger garlic paste
  • 2 onion
  • 1/2 tsp cumin
  • 1/2 tsp chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp termeric
  • 1/2 tsp garam masala powder
  • 3 red tomatoes
  • salt
  • 3 tbsp mustard oil
  • coriander leaves to garnish

How to make Wadi aalu drumstick curry

  1. Heat up oil fry wadi till dark brown but not burn, break it in 3-4 pieces
  2. Cut potatoes lengthwise fry them without peeling off the skin if its new potatoes
  3. Cut drumsticks, wash and keep, your basic preparation is done.
  4. In same oil add cumin seeds, add onion and fry till it changes colour, add ginger-garlic paste, fry until raw smell is gone.
  5. Remove skin of tomatoes(optional), f Grind to make puree, add this to pan, fry for 5 minutes
  6. Add chilli, termeric, coriander powder and salt, fry until masala leaves oil, add fried broken wadi, potatoes and drumstick peices. Mix well.
  7. Add hot water and cook with lid on.
  8. Open and stir in between, add garam masala powder, add more hot water as per your liking. Cook until wadi gets soft.
  9. Garnish with coriander leaves. Serve with roti or steam rice.

My Tip:

You can give 1 whisle and cook it faster. Use hot water in curries it enhances the taste.
