Oil free pure vegetable biryani. Today also my son feel it as magic.

Ingredients Serving: 4

  1. 250 grams (Sona Masuri Rice)
  2. Capcicum 4 colors each 1 piece
  3. Cauliflower 10 florets
  4. Beet Root 1
  5. Carrot 2
  6. Potatoes 1
  7. Cashews
  8. Coconut milk
  9. Onions 2
  10. Vegetables Stock 100ml ( Celery, Spinach and Amaranthus stems juice) 250ml
  11. Garam Masala 1 small spoon
  12. Chilli Powder 1 small spoon
  13. Turmeric 1 Small Spoon
  14. Dhaniya Powder 1 Small Spoon
  15. For Raitha : Thick curd. Cubed cucumber,Onions and beetroot heart.

Instructions

  1. Wash and soak Sona masuri rice.
  2. Grind and squeeze coconut. Grind and squeeze juice from stems of spinach,celery and amaranthus.
  3. Boil the vegetable stock and add soaked rice and cook.
  4. Cut vegetables into cubes.
  5. Place thick bottom pan in extremely low flame. Add coconut milk and vegetables. Sprinkle dry masalas and mix once.
  6. Cover with cooked rice and cover with lid.
  7. Don't allow stem escape and keep on sun for 15 mins.
  8. Mix nicely Garnish with roasted cashews.
  9. Cut Cucumber and onions into small cubes mix thick curd Garnish with beetroot heart. Raitha ready.
  10. Serve Hot with cucumber raitha.
