ABOUT Kolar(Banana) Malpoa RECIPE

Bengalis love sweets, this recipe is an improvisation of the kolar (banana) bora (vada), which my mother occasionally made at home.

Ingredients Serving: 10

  1. Sugar 1 and 1/2 cup
  2. Water 1 cup
  3. Sooji 1/2 cup
  4. Plain flour 1/4 cup
  5. Ripe bananas 2
  6. Warm milk 1/2 cup
  7. Raisins/ Kishmish, a handful
  8. Green cardamoms 5-6
  9. Saunf/ Aniseed 2 tsp
  10. Oil /Ghee for shallow frying

Instructions

  1. Make a sugar syrup by boiling sugar and water together, add 2 green cardamoms which will add flavour to the syrup. Boil till the syrup sticks to the back of a spoon. It should not be too thick. Then keep aside.
  2. In the warm milk, soak the sooji for sometime. Puree the ripe bananas in a blender along with a tsp of the aniseed. Make a paste of the flour with a little water. Now mix all of them together, adding the remaining 1 tsp of aniseed and raisins.
  3. Mix all the ingredients to form a thick batter( add extra milk if the batter is too thick).
  4. Heat oil or ghee in a saucepan, reduce the heat to a simmer, pour a ladle ful of the batter in the pan and fry on a low flame. Then flip over and fry the other side till it's lightly browned at the sides. Remove with a slotted spoon and immerse in the sugar syrup.
  5. Serve hot or in room temperature.
