ABOUT Mutton Rogan Josh RECIPE

This is an authentic Kashmiri Mutton curry, which is traditionally cooked without any onion, garlic or tomatoes. This particular dish is very popular in India and is a very commonly found in the menu of all North Indian restaurants. Everyone is quite familiar with this yummy delicacy and can be relished with Kashmiri pulao, plain steamed rice, naan or kulcha. Country....UAE.

Ingredients Serving: 4

  1. 500 gms mutton with bones
  2. 2-3 tbsp. ghee
  3. 2-3 cardamoms
  4. 1" cinnamon stick
  5. 1 mace (jaiphal)
  6. 2-3 tbsp. yoghurt
  7. 1 tsp. dry ginger powder
  8. 1 tbsp. fennel powder
  9. 1/2 tsp. asafoetida
  10. 2 tbsp. Kashmiri red chili powder
  11. salt to taste
  12. 1 tsp. cumin powder
  13. 1 tsp. garam masala powder
  14. 1/2 tsp. cardamom powder
  15. pinch of saffron

Instructions

  1. In a bowl, mix together yogurt, ginger powder, fennel powder, Kashmiri red chili powder and asafoetida into a paste. Keep aside.
  2. Heat ghee in a pan and temper with cardamoms, cinnamon and mace. Then add the mutton and fry till light brown.
  3. Now add the spice paste. Cover and cook till the oil separates.
  4. Add 1 cup water and salt. Pressure cook for 20-25 minutes on a low flame after the first whistle.
  5. Transfer the contents back to the pan. Add cumin powder, garam masala powder, cardamom powder and saffron. Cover and simmer on a medium flame till ghee comes to the surface and you get the d
