Ingredients Serving: 2

  1. Basmati rice - 1 cup    
  2. Water - 1 cup
  3. Coconut milk - 1 cup
  4. To add in the rice
  5. Cinnamom - 1 small piece
  6. Cardamom - 1
  7. Cloves - 1
  8. Bayleaf - 1
  9. Mint leaves – handful
  10. Ghee – 1 tsp
  11. To saute:
  12. Cooking oil - 2 tbsp
  13. Cinnamom - 1 small piece
  14. Cloves - 1 no
  15. Bayleaf - 1 no
  16. Cardamom - 1 no
  17. Ginger garlic paste – 1 tsp
  18. Big onion - 1 no
  19. Tomato - 1/2 no
  20. Green chillies - 2 nos
  21. Red chilli powder – 1 tsp
  22. Dhania powder - 1/2 tsp
  23. Curd – 1 tbsp
  24. Mint leaves – handful (chopped)
  25. Coriander leaves -  handful (chopped)

Instructions

  1. Wash the rice and take it in a bowl.To this rice,add the spices mentioned under”to add in rice”.
  2. Add equal quantity of water+coconut milk and soak the rice for 10-15 minutes.
  3. In the mean time,finely chop onions,tomatoes,mint leaves and coriander leaves. Then in a pressure cooker base,heat oil and add all the spices,saute for a second.
  4. Then add onions,ginger garlic paste and saute till raw smell leaves it.
  5. Add tomato pieces and saute till mushy.Now add red chilli powder,dhania powder and saute for sometime.
  6. Add mint,coriander leaves.Mix well.Now add the curd,soaked rice with water and spices
  7. Add the required salt.Check for taste and pressure cook in low flame for one whistle or 10 minutes.
  8. Open the lid after the steam is released.Mix with a fork once.Check whether rice is done else add 1/4 cup of water and allow it to cook for 1 whistle in high flame or keep it for 3-4 minutes in high flame.
