Ingredients Serving: 4

  1. onion 1 big size
  2. garlic 2 clove
  3. chilli 2-3
  4. bell pepper all 3 colors 1/2 pcs each
  5. tomato 2
  6. tomato paste 2 spoon
  7. feta cheese/ cottage cheeses 2 spoons
  8. salt and pepper
  9. 4 eggs
  10. mozzarella cheese for garnish or Amul cheese

Instructions

  1. take a wide pan, put 1 spoon oil sauté onion, garlic, green chilies
  2. ten add bell pepper cut into small pieces and sauté for few seconds
  3. add diced tomato and sauté for some min, now add the tomato paste( I used market one for good colour and thickness)
  4. after sauté for some time spread the mixture evenly in the pan
  5. now make a circle like hole in sauté vegetables and pour 1 egg
  6. similar do it for 4 times and put all the egg( I have beaten the egg and put), seasoning with little salt n pepper over the eggs. cove the lid and cook in a slow flame for 5 min or till the eggs are cooked
  7. garnish with cheese and coriander and enjoy with a toast of brown bread
