A simple recipe of egg curry, an apt weeknight dinner that is easy to cook with the absolute minimal ingredients.

Egg Malai Masala

Ingredients to make Egg Malai Masala

  • egg- 8
  • onion - 1 (Medium)
  • ginger - 2 tbsp
  • Green chilli - According to taste (Slit)
  • cilantro - 1/4 Cup (Chopped)
  • cardamom - 1 Black and 3 Green
  • cloves - 4
  • cinnamon - 1"stick
  • turmeric Powder - 1/4 tsp
  • salt - according to taste
  • sugar - 1/2 tsp
  • Garam masala powder - 1/4 tsp
  • Milk - 3 Cups
  • cream - 1/4 cup
  • oil

How to make Egg Malai Masala

  1. Hard boil the eggs. Then smear the boiled eggs with salt and turmeric and fry them well.
  2. Grind the onion and ginger together to form a paste.
  3. Heat oil in a non-stick pan/kadhai.
  4. Temper the oil with cardamom, clove and cinnamon and fry until an aroma develops. Add the onion and ginger paste and fry on a medium flame until oil oozes out.
  5. Next add salt, sugar, green chilli and mix well.
  6. Mix the milk into it and cook it covered on a low flame until your desired consistency and oil oozes out again. Then add the cream and mix well.
  7. Finally add the fried eggs, garam masala and cilantro, mix well and keep it covered for a while.
