ABOUT Thothakura/ Amaranthus Pachadi RECIPE

Traditionally , Pachadis , condiments are a must have dish for lunch . Pachadis are a vital part of Andhra cuisine. This healthy pachadi is prepared using Amaranthus spinach . In Telugu , it’s called Thothakura. Super healthy pachadi which could be served with steamed rice / idlis / dosas .

Ingredients Serving: 3

  1. Amaranthus spinach 1 big bunch
  2. Garlic crushed 1 ladleful
  3. Salt as required
  4. Jaggery a small piece
  5. Water to grind
  6. Sesame Oil 1 tablespoon
  7. Mustard seeds 1/4 teaspoon
  8. Cumin seeds 1/4 teaspoon
  9. Tamarind marble sized ball
  10. Dried red chillies 2 or more as preferred .

Instructions

  1. Clean ,wash 1 bunch Amaranthus spinach along with its soft stalks.
  2. Grind spinach by adding little water to a purée . Grind little coarse .
  3. Heat 1 tablespoon sesame oil in a wok . Crackle 1/4 teaspoon mustard seeds,1/4 teaspoon cumin seeds
  4. Fry 2 dried red chillies . Add 1 ladle full crushed garlic cloves . Sauté until brown .
  5. Pour the spinach purée .
  6. Simmer the flame . Add a small piece jaggery.
  7. Add required salt.
  8. Add a marble sized tamarind when spinach is almost cooked .
  9. Slow cook till the content thickens to thick gravy state .
  10. Amaranthus / Thothakura pachadi ready . Enjoy with hot rice with extra sesame oil.
