ABOUT Kerala Beetroot Coconut Curry RECIPE

This curry is from God ‘s Own Country . Simple but delicious traditional curry . A flavorful curry which goes well with rice , Nadan dosa , rotis .

Ingredients Serving: 3

  1. Beetroot medium 3, finely grated
  2. onions medium 3, thinly sliced
  3. coconut oil 3 tablespoons + 1 tablespoon
  4. Garlic cloves 10
  5. cumin seeds 1 tablespoon
  6. Bay leaf large 1
  7. cloves 3
  8. Fennel seeds 1 tablespoon
  9. turmeric powder 1/2 teaspoon
  10. Red chili powder 1 teaspoon
  11. coriander powder 3/4 teaspoon
  12. salt as per taste
  13. coconut 1 medium , grated
  14. cilantro chopped 3 tbsp
  15. Curry leaves 8-9 optional
  16. water 1 glass

Instructions

  1. Heat 3 tablespoons coconut oil in a wok . Roast 1 tablespoon fennel seeds ,1 Bay leaf, 4 cloves for a minute
  2. Saute 3 medium sized onions until translucent.
  3. Add crushed 10 garlic cloves , 1 tablespoon cumin seeds and saute for 1-2 minutes
  4. Add 3 medium beetroots grated . Saute till raw smell disappears.
  5. Add 1 glass water and bring to boil
  6. Add 1/2 teaspoon turmeric powder.
  7. Add 1 teaspoon red chili powder .
  8. Add 3/4 teaspoon coriander powder, salt and mix well. Simmer and cook until beetroot is tender
  9. Extract fresh thick coconut milk from grated coconut
  10. Pour thick coconut milk and gently mix
  11. Allow to boil for 3 minutes over low heat. Sprinkle cilantro's and coconut oil
  12. Serve Beetroot Coconut milk curry with Appam and dosa
