1 cup coconut powder for topping
Instructions
TAKE 1 CUP CASTOR SUGAR, ADD 1 CUP CURD
ADD 3/4 CUP REFINED VEGETABLE OIL, MIX WELL
ADD 1/2 CUP DESSICATED COCONUT POWDER
SIEVE 2 CUPS ALL PURPOSE FLOUR INTO THE
BOWL
ADD 1/4 TSP BAKING SODA, 1 TSP BAKING
POWDER, SIEVE & MIX ALL THE INGREDIENTS WELL
ADD 1 TSP VANILLA ESSENCE, MIX IN ONE
DIRECTION
TRANSFER THE READY BATTER INTO AN OIL
GREASED BAKING TIN
TAP THE TIN, PLACE ON A GRILL STAND, BAKE IN A
PREHEATED COOKER FOR 40 MINS
CHECK TO SEE IF THE CAKE IS DONE, ALLOW IT TO
A LITTLE
UNMOULD & MAKE PRICKS ON THE BASE LIKE THIS
TAKE 1 TBSP COCONUT WATER, ADD 2 TSP HONEY,
MIX WELL
SPREAD THE READY SYRUP ON TOP & ALL
CORNERS SO THE CAKE BECOMES SPONGY &
JUICY
ADD MIX FRUIT JAM ON TOP, SPREAD IT EVENLY
SPRINKLE DESSICATED COCONUT POWDER ON
TOP
SLICE & SERVE, TRY IT, IT'S YUM
