Ingredients Serving: 4

  1. Burger buns 4
  2. Butter unsalted 5 tablespoons
  3. Onion 2 medium sized finely chopped
  4. Garlic fat cloves 3 finely chopped
  5. Tomatoes big sized 2 finely chopped
  6. Carrot medium 1 finely chopped
  7. Green capsicum small 1 finely chopped
  8. Frozen green peas 2 to 3 tablespoons
  9. Salt 3/4 teaspoon
  10. Cheese cubes 3
  11. Mozzarella cheese 1 cup
  12. water 1/4 cup
  13. For the Masala Paste :
  14. white sesame seeds 3 tablespoons
  15. Coriander seeds 1 Teaspoon
  16. Cumin seeds 1 teaspoon
  17. Salt 1/2 teaspoon
  18. Sugar 3/4 teaspoon
  19. Red chilly powder 1 teaspoon
  20. Dry mango powder 1.5 teaspoon
  21. Dried fenugreek leaves crushed a fistful
  22. Szechuan sauce 1 tablespoon
  23. Turmeric powder 1/4 teaspoon
  24. Water little for grinding
  25. For Roasting :
  26. Butter unsalted 2 tablespoons
  27. Dried fenugreek leaves 1/2 teaspoon

Instructions

  1. In a blender jar , take 3 tablespoons white sesame seeds .
  2. Add 1 teaspoon coriander seeds .
  3. Add 1 teaspoon cumin seeds .
  4. Add a fistful of crushed dried fenugreek leaves.
  5. Add 1/2 teaspoon salt .
  6. Add 3/4 teaspoon sugar .
  7. Add 1 teaspoon red chilli powder , 1.5 teaspoon dry mango powder .
  8. Add 1 tablespoon Szechuan sauce , 1/4 teaspoon turmeric powder .
  9. Add little water to grind the ingredients to a smooth thick paste .
  10. Heat 2 tablespoons butter in a tawa .
  11. Add finely chopped 3 fat garlic and sauté until crunchy .
  12. Add 2 medium sized onions finely chopped . Sauté until light brown .
  13. Add 3/4 teaspoon salt to the onions while sautéing .
  14. Add 2 big sized tomatoes chopped . Sauté until red and mushy .
  15. Add 2 tablespoons frozen green peas , finely chopped 1 medium sized carrot .
  16. Add 1 small capsicum finely chopped . Sauté all the veggies until soft in low heat .
  17. Add the ground masala paste.
  18. Add 1/4 cup water . Mix all together and cook for 3 minutes until water drained .
  19. Mash the veg mixture as much as possible .
  20. Add extra butter .
  21. Add 3 white cheese cubes . If using salted cheese, adjust salt accordingly.
  22. Add 1 cup mozzarella cheese .
  23. Mix all together to a cheesy creamy masala.
  24. Take 4 burger buns . Cut the buns half way horizontally . Don’t cut fully .
  25. Stuff the cheesy masala filling. Heat a tablespoon butter on tawa. Sprinkle dried fenugreek leaves.
  26. Roast the top and sides on the butter gently for a minute . Repeat steps for the remaining buns .
  27. Tawa Premium Burger Buns are ready . This is Hyderabad’s special street food.
  28. Serve hot . Enjoy .
