  1. 1/4kj brinjol

Instructions

  1. ADD 3 CHOPPED TOMATOES, 2 GREEN CHILLIES, 2 PIECES OF GINGER, 6-8 CASHEWS TO A MIXER JAR, BLEND
  2. DRY ROAST 2 TSP CHANA DAL, 1 TSP URAD DAL, 1/2 TSP PEPPERCORNS, 1 TSP DRY COCONUT
  3. ADD 1/2 TSP CORIANDER SEEDS, 1 TSP CUMIN SEEDS, 1.5 TSP TAMARIND, 2 DRY RED CHILLIES
  4. SAUTE FOR 2 MINS UNTIL GOLDEN BROWN
  5. ADD TO A MIXER JAR, BLEND INTO A COARSE POWDER
  6. ADD 1/2 TSP EACH OF SALT, RED CHILLI & TURMERIC POWDERS INTO THE MASALA POWDER
  7. TAKE 500 GMS BRINJALS, CUT OFF THE TOPS, SCOOP OUT THE INSIDES TO MAKE A HOLLOW LIKE THIS
  8. STUFF THE READY MASALA POWDER INSIDE THE CAVITIES
  9. FIX BACK THE TOPS BY INSERTING TOOTHPICKS TO HOLD THEM IN PLACE
  10. HEAT 3 TSP OIL, ADD 1 BAY LEAF, 4 CLOVES, 1 CINNAMON STICK
  11. ADD 1 CUP ONION PASTE, SAUTE UNTIL TRANSLUCENT
  12. ADD 1 TSP SALT, 1/2 TSP EACH OF KASHMIRI CHILLI & TURMERIC POWDERS, 1 TSP SUGAR
  13. CAREFULLY ADD THE STUFFED BRINJALS
  14. ADD THE READY TOMATO-CASHEW PASTE, ADD SUFFICIENT WATER FOR THE GRAVY, COVER & COOK FOR 20 MINS
  15. GARNISH WITH 2 TBSP CHOPPED FRESH CORIANDER, TAKE OFF HEAT
  16. SERVE HOT WITH RICE / ROTI
