ABOUT Vegetable Korma RECIPE

Ingredients Serving: 4

  1. Oil 2 tbsp
  2. Carrot 1
  3. French beans 5-6
  4. Cauliflower florets 3-4
  5. Potato 1
  6. Pea pearls 2 tbsp
  7. Onion 2
  8. Tomato 2
  9. Cashews 8-10
  10. Ginger chilli paste 1 tbsp
  11. Bay leaf 1
  12. Cloves 2
  13. Cinnamon 1"
  14. Mace 2-3 threads
  15. Curd 1/2 cup
  16. Salt 1 tesp
  17. Red chilli powder 1/4 tesp
  18. Turmeric powder 1/2 tesp
  19. Coriander powder 1 tesp
  20. Garam masala 1/4 tesp
  21. Cumin powder 1/4 tesp
  22. Water 1 cup
  23. Fresh cream 2 tbsp
  24. Fenugreek leaves 1 tesp

Instructions

  1. BRING 2 CUPS OF WATER TO A BOIL, ADD 1/2 TSP SALT
  2. ADD 1 EACH OF A DICED POTATO & CARROT, 5-6 CHOPPED BEANS, 3-4 CAULIFLOWER FLORETS, BOIL FOR 2 MINS
  3. ADD 2 TBSP PEAS, COOK FOR ANOTHER 2-3 MINS
  4. STRAIN THE VEGETABLES, SET ASIDE
  5. HEAT 1 TBSP OIL, ADD 2 CHOPPED ONIONS, SAUTE UNTIL TRANSLUCENT
  6. ADD 2 CHOPPED TOMATOES, 8-10 CASHEWS, SAUTE UNTIL SOFT
  7. COOL THE ONION-TOMATO MASALA, ADD TO A MIXER JAR WITH 1/2 CUP CURD, BLEND TILL SMOOTH, SET ASIDE
  8. HEAT 1 TBSP OIL, ADD 1 BAY LEAF
  9. ADD 2 CLOVES, 1" CINNAMON STICK, 2-3 STRANDS OF MACE
  10. ADD 1 TBSP GRATED GINGER-GREEN CHILIES, SAUTE
  11. ADD 1/2 TSP TURMERIC, 1 TSP CORIANDER, 1/4 TSP RED CHILLI POWDER
  12. ADD 1/4 TSP EACH OF GARAM MASALA & CUMIN POWDERS, SAUTE
  13. ADD THE READY MASALA PASTE, SAUTE UNTIL THE MIXTURE STARTS TO LEAVE OIL
  14. ADD 2 TBSP EACH OF FRESH CREAM & KASURI METHI, STIR & COOK FOR 2 MINS
  15. ADD 1 CUP OF WATER, BRING THE CURRY TO A BOIL
  16. ADD THE BLANCHED VEGETABLES
  17. SEASON WITH SALT, COVER & SIMMER FOR 5 MINS
  18. GARNISH WITH FRESH CORIANDER, SERVE HOT WITH ROTI / RICE
