Egg apoam curry is a very tasty egg curry recipe.

Ingredients Serving: 2

  1. Eggs- 2nos
  2. onion -3nos
  3. Green Chili -2
  4. Tomato -1
  5. Ginger and garlic 1 tablespoon
  6. Red chilli powder 1 teaspoon
  7. Kashmiri red chilli powder 1 teaspoon
  8. Cumin powder one teaspoon
  9. Coriander powder one teaspoon
  10. Garam masala powder half teaspoon
  11. Oil 3/4 tablespoon
  12. Cloves 3/4
  13. Cinnamon 1
  14. Green cardamom 2
  15. Cumin seeds half teaspoon
  16. Coriander leaves to tablespoon
  17. Gram flour one and a half tbsp

Instructions

  1. TAKE 2 EGGS, ADD SALT & PEPPER POWDER TO TASTE
  2. ADD 1/4 CUP CHOPPED ONIONS, 1 GREEN CHILLI
  3. ADD 2 TBSP GRAM FLOUR
  4. MIX WELL TO MAKE A SMOOTH BATTER
  5. POUR THE BATTER INTO A GREASED APPE PAN
  6. COVER & COOK FOR 1 MIN
  7. FLIP CAREFULLY & COOK FOR ANOTHER 2 MINS
  8. ONCE DONE, TAKE OFF HEAT
  9. ADD 1 EACH OF AN ONION & TOMATO & GREEN CHILLI, 4-5 GARLIC CLOVES TO A MIXER JAR, BLEND
  10. HEAT 1 TBSP OIL, ADD 1 TSP CUMIN SEEDS, 2-3 CLOVES, 1-2 GREEN CARDAMOMS, 1 INCH CINNAMON STICK
  11. ADD 1/2 CUP CHOPPED ONIONS, SAUTE
  12. ADD 1/4 TSP TURMERIC POWDER, SALT TO TASTE, SAUTE UNTIL GOLDEN BROWN
  13. ADD THE READY MASALA PASTE, 1 TSP GINGER PASTE, SAUTE
  14. ADD 1 TSP CUMIN, CORIANDER, RED CHILLI & KASHMIRI RED CHILLI POWDERS, 1/2 TSP TURMERIC, SOME WATER
  15. ADD SUFFICIENT WATER FOR THE CURRY, MIX WELL
  16. ADD SALT TO TASTE, COOK FOR 4-5 MINS
  17. ADD THE READY APPE, COOK FOR 3-4 MINS ON LOW-MEDIUM HEAT
  18. ADD 1 TSP GARAM MASALA POWDER, 2 TBSP CHOPPED CORIANDER LEAVES, MIX WELL, SERVE HOT WITH ROTI / RICE
