ABOUT Chicken Begum Bahar RECIPE

This dish is for special occasions. Its a very tasty chicken dish with nutty and creamy gravy, seasoned with dried hibiscus powder, brown onion, grama masala, sesame and other indian spices.

Ingredients Serving: 3

  1. 550 chicken
  2. 150gm greek yogurt
  3. 3-4tbsp sesame seeds
  4. 150gm minced chicken
  5. kewra water
  6. 3medium onion
  7. 2tsp crushed garlic
  8. 2tsp ginger paste
  9. salt as per taste
  10. sugar as per taste
  11. turmeric powder
  12. chilli powder
  13. Kashmiri chilli powder
  14. cinnamon
  15. cardamom cloves
  16. Star anise
  17. Dry Hibiscus petals
  18. Clarified butter or ghee
  19. Caraway seeds
  20. White peper corn
  21. Black peper corn
  22. nutmeg
  23. Black cardamom

Instructions

  1. HEAT 1 TBSP OIL, ADD 3 SLICED ONIONS, SAUTE UNTIL GOLDEN BROWN
  2. ADD 3 TBSP SESAME SEEDS, SAUTE FOR 2 MINS, COOL A LITTLE, ADD TO A MIXER JAR, BLEND TILL SMOOTH
  3. HEAT 1 TBSP OIL, ADD 1 TBSP WHOLE GARAM MASALA (CINNAMON, CARDAMOMS, CLOVES, WHITE PEPERCORNS )
  4. ADD 2 TSP CRUSHED GARLIC, SAUTE FOR A FEW SECONDS
  5. ADD 2 TSP GINGER PASTE, SAUTE
  6. ADD THE READY FRIED ONION-SESAME PASTE, SAUTE
  7. ADD 150 GMS THICK CURD, MIX
  8. ADD 1 TSP GHEE, 1/2 TSP EACH OF TURMERIC & RED CHILLI POWDERS
  9. ADD 1 TSP KASHMIRI CHILLI POWDER, MIX WELL ON MEDIUM HEAT
  10. ADD 500 GMS CHICKEN PIECES, STIR IN
  11. ADD SALT TO TASTE, COOK ON MEDIUM HEAT FOR 3-4 MINS
  12. NOW COVER & COOK ON LOW HEAT FOR 6-8 MINS
  13. ADD 150 GMS MINCED CHICKEN, MIX WELL
  14. COVER & COOK FOR ANOTHER 10 MINS ON LOW- MEDIUM HEAT
  15. DRY ROAST CINNAMON, CLOVES, GREEN & BLACK CARDAMOMS, STAR ANISE, NUTMEG, CARAWAY SEEDS, PEPPERCORNS
  16. ADD 1 TSP DRIED HIBISCUS PETALS, GRIND
  17. ADD 1/2 TSP SUGAR, THE POUNDED GARAM MASALA
  18. ADD 3 DROPS OF KEWRA WATER, MIX WELL
  19. ADD 1 TSP GHEE, MIX, SERVE HOT WITH RICE OR ROTI
