A traditional American breakfast with a twist of sweet potato in a healthier way ... Great for breakfast or brunch with soft , tender poached eggs!!

Ingredients Serving: 3

  1. For Sweet Potato Hash Brown:
  2. Sweet potato: 1 large
  3. onion : 1 finely chopped
  4. garlic : 2 cloves finely chopped
  5. salt: to taste
  6. fresh pepper powder: 1 tsp
  7. olive oil : 1 tsp + 3 tbsp
  8. For poached egg:
  9. fresh egg : 1
  10. water : 1 cup
  11. salt: a pinch
  12. vinegar (optional)


  1. Take 1 large sweet potato. Peel off and shred
  2. Wash with water twice
  3. Drain the water and squeeze any extra
  4. Add 1 finely chopped onion, 2 garlic cloves
  5. Add 2 tbsp flour
  6. Add 1 tsp pepper powder and salt to taste
  7. Add 1 tsp olive oil
  8. Mix well
  9. Make balls and flatten it
  10. In a Tava, add 2 tsp oil
  11. Add the hash brown pieces
  12. Cook each side for 4 minutes in low flame
  13. Then in high flame for 2 minutes . Take out when it becomes crisp
  14. Crispy healthier version of hash brown is ready
  15. OR
  16. Fry the hash browns
  17. Take out and drain the excess oil when they turn golden brown
  18. For Poached Eggs
  19. In a pan, add a cup of water and pinch of salt.
  20. Once the water is hot (no boiling) whisk with a beater and quickly add egg in the centre
  21. Cook for 2 minutes and poached egg is ready
  22. Serve the hash brown with poached egg and some tomato slices
  23. Perfect for breakfast or brunch
